Nata de coco is a translucent, chewy gel made by fermenting coconut water with the bacterium Komagataeibacter xylinus, which produces bacterial cellulose. It originated in the Philippines and is widely used in Southeast Asian desserts and drinks. It has almost no flavour of its own, so it takes on the taste of the syrup or juice around it, and it is mostly water and dietary fibre.
