To make celery juice easy to drink, blend or juice celery with green apple or cucumber at about 2:1, then add a squeeze of lemon and a little ginger. Choose pale inner stalks, which are less bitter, and serve it cold. Celery juice has only about 14 kcal per 100 ml; claims that it “detoxes” or cures disease are not supported by evidence.

Key facts at a glance

  • Bitterness comes mainly from the dark outer stalks and leaves.
  • Apple, cucumber, lemon, pineapple and ginger are the best partners.
  • Serve cold — chilling reduces the grassy note.
  • Nutrition: low calorie, some potassium and vitamin K, and naturally about 80 mg of sodium per 100 ml.
  • Drink within 24 hours if homemade.
